Victoria's Thai Soup Recipe

I wanted to share this delicious thai recipe which is a firm favourite of customers when ever I use this in a demonstration!


  • 400ml water
  • 1.5 vegetable stock cubes
  • 1 red pepper
  • 1 courgette
  • 1 carrot
  • 4 spring onions
  • 1 cm of grated ginger
  • 1 clove of garlic crushed
  • A squeeze of lemon juice
  • Handful of coriander
  • 1 teaspoon of chilli flakes
  • 1/3 block of coconut cream bar



  1. Chop all vegetables and put along with the water and all of the other ingredrents into a large saucepan or soup maker.
  2. Either bring to the boil and let it simmer for 20 minutes 
  3. Blend using a hand held stick blender until the soup has a smooth consistency

Enjoy with crusty bread
